What is Baking?
Baking is a process of cooking food that uses dry heat, typically in an oven, to create desired results. This can result in a variety of textures and flavors, depending on the item being baked and the method used.
The most common type of baking is done with flour, sugar, butter, eggs, and baking powder or soda. This combination of ingredients is known as “quick bread” because it doesn’t require time to rise before baking. Quick bread includes items such as muffins, biscuits, and pancakes.
Baking has been around for centuries and is a popular cooking method for many different types of foods. While baking was originally done in primitive ovens, the modern oven has made the process much easier and more consistent.
What are the Types of Baking?
Here are the different baking methods:
1. Rubbing Method- The rubbing method is also known as Cutting. In this method of baking, butter is the main ingredient. At first, butter is divided into small parts and put in the flue, then mixed nicely.
2. Creaming Method- The creaming method is the most accomplished method of baking. In this baking method, sugar is added with butter and beaten constantly till it loose there color and texture.
3. Whisking Method- The whisking method is a very useful method in baking. Basically, it’s used for sponge cakes, meringue, chiffon cakes, etc.
4. Knockback Method- In this baking process first we prepare a dough and beat it constantly. Basically when the dough is rising and the excess air is knocked out.

Students in Escoffier’s Baking & Pastry programs spend part of their time exploring what it takes to make noteworthy bread. Here’s some of what they may learn.
Mixing and Working with Preferments
Levains, bigas, poolishes, pâte fermentées. What’d you say? While these terms may be unfamiliar to students at the start of a bread baking class, students can have the chance to explore the meanings and uses of these various preferments.
A preferment is a mixture of flour, water, and leavening agent that’s allowed to ferment before it’s added to the rest of the dough. By incorporating one of these mixtures into your baking, you’ll be able to add more complex aromas and flavors without the worry of over-proofing your dough.
Bread baking classes can help you distinguish the difference between each type of starter, as well as the best way to work with each one. With this information in hand, you can continue to play with temperature, flours, and methods to create a preferment that’s all your own.
The Science of Baking at Different Temperatures
Finding and maintaining the correct temperature is an essential part of the bread baking process. Whether you’re letting a dough rise or baking a loaf in the oven, a temperature that is too low or too high can lead to disappointing results.

In this culinary arts course, students will examine the fundamental principles of baking as they relate to occupational and industry terminology, product and ingredient identification, equipment, and elaboration processes.
