  • – Preheat oven to 350 degrees f/180 degrees c. Line a large baking tray with parchment paper. Set aside

  • Fill with jam – Place the squares on the parchment paper on top of the baking tray. Place a teaspoon of jam in the center of each square.

  • Brush pastry tops – Brush the tops of the pastry with the beaten egg. Peirce holes in the top of each turnover with a fork.
  • – Bake between 18 – 20 minutes or until golden and puffed up. Remove from oven to cool.
  • Glaze and serve – Drizzle the glaze over the cooled turnovers. Can serve immediately or store in and airtight container in the fridge up to three days.

  • Don’t overfill the pastry – It’s easy to want to put too much jam in the middle of these. Don’t because they will be very hard to close and most likely will burst open when baking. I put a heaping teaspoon into the center of each pastry square.
  • Making the glaze – I like to make a thicker glaze so it holds it’s shape like you see here. I like to add a little milk at a time when making glaze until I reach the desired consistency.
  • Use a bag to drizzle glaze – I used a small sandwich bag with a tiny hole cut in the corner to drizzle the glaze. It makes perfect lines.
  • – these can be prepared ahead of time and place on a baking tray, covered and kept in the fridge until baking time. You can do this up to one day before you bake them.

  • – you can use any kind of jam you prefer for this recipe. I used partridgeberry/lingonberry jam. That is a unique jam that’s absolutely delicious if you can find it. But any jam like strawberry, blueberry, cranberry, raspberry or your other favourite flavours.

Just sprinkle sugar on top of the unbaked turnovers. You can even make a chocolate glaze by adding 1 tablespoon of cocoa powder to the powdered sugar.

Sweet temptations made in a jiffy, and it can be transported to work or school.

📕 What is this?

Puff pastries with a jam and cream cheese filling are inspired by filled cream cheese danish pastries.

Danish are not the same as puff pastry because danish pastry includes yeast. Layered puff pastry, on the other hand, is made without yeast.

Technically, and as a reference, french croissants are danish because the buttery flaky pastry includes yeast.

Yet, you are free to use danish pastry to make these little pocket/triangle/turn-overs, instead of puff pastry.

I used puff pastry dough because it’s much more common in stores and the idea of this recipe is to reduce time spent in the kitchen by using store-bought pastry sheets.

As a little backstory: Danish were popularized in Copenhagen Denmark, and they come in all shapes. They originally, together with other Viennese treats, came from Vienna in Austria and in the Scandinavian countries they are still known as Wienerbrød.

These can be enjoyed as a dessert but also as a breakfast or brunch pastry.

I developed this recipe with ease of use and simplicity in mind.

Here is what you need to get to make it. Detailed measurements can be found in the recipe card further below.

  • Puff pastry sheet – store bought or homemade puff pastry. I prefer to use refrigerated puff pastry sheets to frozen ones because those have to be thawed. If you can only get frozen sheets, you will have to thaw them first.
  • Jam – I used homemade apricot jam because that’s what I had on hand. These pockets also turn out great with sweet or sour cherry jam, chunky or smooth strawberry jam or homemade red currant jelly.
  • Cream Cheese – plain unflavored.
  • Egg – for the egg wash. Optional but makes it look better. You can use just the egg yolk too. The whole egg as egg wash option is for lazy people like me.

Step 1

Spread your puff pastry sheet over your parchment baking sheets.

Divide into 6 rectangles.

Step 2

Spread cream cheese and jam over each rectangle

Step 3

Fold over and seal the sides with a fork.

Step 4

Make some cuts at the top (helps release steam).

Scramble an egg in a small bowl and brush egg wash over pastries. That will create the shine.

Bake pastries golden brown.

💡 Tips

  • Use a cooled pastry sheet because the longer it sits out at room temperature, the less it will puff later in the oven.
  • Spread the cream cheese and jam into the center of each rectangular. Keep a distance from the border to avoid cream cheese or jam on the part where you need to close and seal them. The pastry parts need to stick together and that works only without the jam or cream cheese. Pastry to pastry sticks and seals the best!
  • Place filled pastries only into preheated oven.

🍱 Storing

Keep your freshly baked pastries in airtight containers or in boxes at room temperature.

But make sure they have cooled completely to avoid condensation in the box. That would make them soggy otherwise.

The cream cheese puff pastry pockets can be wrapped into parchment paper to take to work or school.

If stored in a humid-free cool environment, they stay good for 2 days at least. Don’t consume if older than two days because of mold danger, and besides the pastry becomes hard too.

They are best enjoyed freshly baked or a few hours later.

Typically, you can prepare your puff pastry danish at night, and in the morning you can take them to work or to school.

Do I have to roll out store bought puff pastry?

No, you don’t have to roll out your puff pastry sheet. In stores, you can get refrigerated or frozen puff pastry sheets. You can also get one large roll or smaller rectangular. If you use smaller rectangular sheets, you won’t need to cut them, and you can skip step 1 in the main instructions.

Can I use something else instead of egg for the pastry wash to make the pastries shiny?

An egg wash is definitely the best option to make your pastries shiny at the top. You can also substitute the egg and use milk for a pastry wash. Just brush milk over your pastry, the same way you would brush a scrambled raw egg over your pastry.

Can I pour a sugar glaze over the pastries?

Yes, you can choose to pour a sugar glaze over your pastries. In that case, you can eve skip the egg wash. The sugar glaze is poured over the pastries after they have baked and cooled. Mix powdered sugar with fresh lemon juice. A few drops of lemon juice are more than enough. You can also substitute the lemon juice with rose water or orange blossom water. Note that sugar glaze can crumble off easily, so I try not to add a glaze when I will be transporting the pastries.

Why is my puff pastry not crispy?

If your puff pastry is soggy or not crispy, it’s an indication that it needs more baking time at a constant heat level. Bake at a steady heat of 350 Fahrenheit (ca. 180 °C) for 15–18 minutes. The time may vary from oven to oven and also the pastry brand can make a difference. Furthermore, make sure to only place your filled puff pastries into the oven if the oven was adequately preheated. Keep in mind, that these are “pockets” and that steam will get trapped on the inside, which will result in a soft bottom side.

  • Preheat your oven to 350 Fahrenheit (180 degree Celsius).

Indulge in these delectable jam puff pastry tarts that are easy to make and simply delicious.

With minimal ingredients, you can whip up a delightful dessert consisting of a puff pastry base topped with your choice of jam, sliced almonds, and light lemon glaze.

Whenever I had leftover puff pastry from the meal, and I don’t want it to just sit in the fridge, I usually turn it into a quick and easy dessert.

This, for me at least, has been quite a haphazard affair and I’ve never really taken note of how much jam I’ve used, or how much puff pastry, etc. So I decided it was time to figure out exactly how much jam I was actually using.

If I’m more in a baking kind of mood and have jam bumping around the fridge, one of my all-time favorite slices to make is my Jam Slice/Jam Squares.

Why You Will Love These Jam Puff Pastry Tarts

  • These jam tarts made with puff pastry are super easy and simple to make. And make for a quick dessert.
  • These puff pastry tarts are made with store-bought puff pastry. So there is no need to make the pastry ahead of time!
  • This tart combines the buttery flavor of the puff pastry, with the sweet jam, crunchy almond slices, and a tangy lemon glaze.

Here are some notes on the ingredients used in this recipe. Please see the recipe card for quantities.

Store-bought Puff Pastry – I used 350 grams (12 oz.) of prerolled puff pastry. This recipe is made to use the entire roll of puff pastry to make 10 tarts. Use your favorite puff pastry – for a vegan alternative use a plant-based pastry.

If using the Edmonds sheets (in New Zealand) of rolled puff pastry, approximately 2 sheets is equal to a 350-gram roll, but will probably make about 8 tarts. I would divide each sheet into 4.

Egg and water for the pastry egg wash. The egg wash can be replaced with a milk or cream wash instead. A milk or cream wash requires about 2 tablespoons of milk or cream, undiluted.

Jam – here choose a jam of your choice, I personally like strawberry, boysenberry but plum, and apricot also work really well. The choice is yours.

Sliced almonds – this adds a little bit of crunch to these jam tartlets.

Icing sugar (powdered sugar or confectioner’s sugar) – this is used to make a glaze, an optional extra for these jam tarts.

Water & Lemon Juice – to make a tangy lemon glaze, use half lemon juice and half water to make the glaze.

How to Make Jam Puff Pastry Tarts

Step 1 – Place the oven rack in the middle of the oven. Preheat the oven to 200°C/390°F.

Step 2 – Line two large baking trays with baking paper. A half sheet (40cm x 28cm or 16″x11″) is the perfect size for a roll of pastry. If using a quarter sheet, the pastry will need to be divided in half for each baking tray.

Step 3 – Crack open an egg, add in a tablespoon of water, and beat until the egg is well mixed. Set aside.

Step 4 -Unroll the puff pastry. Using a ruler and knife or bench scraper, measure and cut out 10cm x 10cm (4″ x 4″).

Step 5 – To shape the pastries, gently fold the pastries from one corner to the other to make a triangle. Using the ruler, measure a border of 1.5cm. Cut from the long side of the triangle up the corner leaving the corner intact.

Step 6 – Gently open the folder over the triangle. Using a form, prick the center square. This will prevent the center from puffing up too much during baking. Brush the entire top of the pastry with the egg mixture.

TIP – The pricking or docking of the center of the pastry is an essential step. This prevents the pastry from puffing up in the center during the baking process.

Step 7 – Place about a tablespoon of jam in the center of the pastry. Then fold the left cut corner side over to the opposite side and tuck under the right corner while pulling it to the left. Press down gently and brush the edges with the egg wash.

TIP – In other words, you will be pulling each of the cut corner borders to the opposite side, crossing over each other to form a kite-like pastry shape.

Step 8 – Sprinkle the almond slices over the jam and pastry edges. Bake for 20 to 25 minutes or until the pastry is puffed up and golden brown. Remove from the oven and allow to cool.

Step 9 – In a small bowl, combine the icing sugar, lemon juice, and water to form a glaze. Once the tarts have cooled down, drizzle the glaze over the tarts. Serve and enjoy. This is an optional extra step and can be left out.

Pro Tips for this Recipe

The temperatures stated are for conventional ovens. For convection, fan-forced, fan-assisted, or air-fryers, the temperature must be reduced by 20°C/25°F, or the gas mark by 1.

For baking, a general rule is to have the oven rack in the middle of the oven.

For best baking results invest in an oven thermometer, as the temperature dials on the oven may not be accurate. Place the thermometer in the middle of the center rack for the most accurate results. I hang my oven thermometer off the center of my oven rack.

Keep in mind that all ovens work slightly differently and bake times may need to be adjusted slightly for your specific oven.

How to Prevent the Puff Pastry from Cracking when Rolling it Open

Allow the puff pastry to completely defrost before attempting to roll it open. If the pastry is frozen at all then it will crack when unrolling it.

Preventing a Soggy Bottom

This tart relies 100% on the baking process to prevent a soggy bottom, but the pastry must be cooked all the way through. A hot preheated oven is key to preventing a soggy bottom, as it not only allows the puff pastry to puff up but allows for a nice bake.

Storage and Freezing

This pastry is best served fairly fresh but will keep in an airtight container for 2 to 4 days in the fridge. To reheat cold pastry, preheat an oven to 180°C/355°F, cover the pastry with foil, and heat for 10 minutes. Remove from oven and allow to cool.

Can I make these jam tarts using leftover puff pastry?

Yes! You can make one or two of these tarts using the leftover puff pastry. Each tart around 10cm x 10cm (4″ x 4″) in size require about a tablespoon of jam.

What baking tray did you use?

I used a 16″x11″ (40cm x 28cm) baking tray or a half-sheet baking tray. When I use my quarter sheet tray (13″ x9″ or 33cm x 23cm), then I need to divide the pastry into two to fit.

Can I make these tarts ahead of time?

These tarts can be made a few hours ahead of time. And store in an airtight container while waiting to serve.

If you’ve been a reader of Today’s Creative Life, then you know I love working with Puff Pastry because it’s so dang easy and it’s always impressive. I always feel like a pastry chef with minimal effort or skill.

These little puff pastry sandwiches are another example of that. Since it was close to Valentine’s Day, I thought heart-shaped Nutella and raspberry jam treats would be perfect. But you can make them any shape and truth be told, just cutting squares would be much less wasteful. You can also add other fillings, sweet or savory.

Dessert Recipes for Puff Pastry

  • Roll out the dough. If your dough is frozen, you’ll want to thaw it before. I place the dough on a piece of parchment paper so it’s easy to transfer to my baking sheet.
  • Spread the Nutella over the whole sheet of puff pastry. I placed the Nutella in the microwave for just a couple of seconds so it was easier to spread and wouldn’t pull on the dough.
  • Now spread the jam on top of the chocolate.
  • Roll out the second sheet of puff pastry on a separate sheet of parchment paper.
  • Time to place it on top of the chocolate and jam. I picked up the whole piece of paper with the dough, flipping it over, and placed it on top.
  • Time to cut the hearts with your cookie cutter. Or cut into any shape. You could even roll the whole thing and cut it like cinnamon rolls.
  • Continue to cut all your shapes. You can cut shapes after transferring the paper to your baking sheet if wanted.
  • Transfer each heart to a prepared cookie sheet. Or if you chose to already have it on the sheet before cutting your hearts, then just start removing the excess dough, leaving the hearts behind.
  • Bake to a golden brown. Once you pull them from the oven, give them a slight sprinkle of powdered sugar for a finished look. Or drizzle chocolate across the tops.

Puff Pastry with Chocolate

Puff pastry and chocolate are a great pair. I usually use Nutella because of the consistency, making it really easy to spread. If you’re wanting to use chocolate chips or chocolate bars, this recipe teaches you how to make chocolate spreadable. I like to add different flavors of jam or even a cream cheese mixture like I did for the Pumpkin Cream Cheese Puff Pastry Braid.

Is Puff Pastry the Same as Phyllo Dough?

Puff pastry and phyllo dough are not the same. They are both doughs, but should not be used as the same. AllRecipes has a good explanation and article on phyllo vs. puff pastry.

The main differences between the two doughs are the preparation method and fat content. Puff pastry is laminated, which means butter is folded into the dough multiple times to create alternating layers of butter and dough. This results in lots of thin layers and an airy texture. Phyllo, meanwhile, is a paper-thin dough that’s made with oil instead of butter. The delicate sheets are brushed with butter or oil, then layered and baked.

You can make them from scratch but the store-bought varieties work really well too.

Fillings for Puff Pastry

Choose sweet or savory when choosing what to use with puff pastry. I’ve made savory puff pastry tarts, bread sticks, and braids, as well as sweet fillings of cream cheese, jams, and pie fillings.

Puff Pastry Savory Recipes

Here are a few simple savory-filling ideas.

  • Pesto and Parmesan cheese – I used this combo for a puff pastry tomato tart. A little goes a long way.
  • Garlic, Gorgonzola cheese and salt. Mix it together with a little cream cheese or even mayo and then spread before baking.
  • Any spreadable cheese is a quick way to add a savory taste. Boursin cheese found in the deli section is great for this.

Puff Pastry Sweet Recipes

Sweet filling ideas are simple with fruits, jams and cream cheese.

  • Cream cheese filling mixed with a little milk and vanilla. Spread it alone or with any sweet jam.
  • Lemon Curd and Cream Cheese filling
  • Strawberry and Cream Cheese filling – use jam or sliced berries. Swap out the jam or berries.
  • Peach Cream Cheese. I like using sliced peaches with cream cheese filling for braids. Use pears or berries.
  • Pie Filling – Canned pie filling is great for puff pastry fillings too.
  • Store-bought puff pastry ( 2 sheets)
  • Nutella – I probably used 2/3 cup.
  • Raspberry Jam (1/2 cup)
  • Powdered Sugar for sprinkling
  • One egg for egg wash
  • Set oven to 425 degrees F.
  • Set the puff pastry out to thaw if it’s frozen.
  • Gather a cookie sheet, rolling pin, parchment paper, and a heart-shaped cookie cutter.
  • Roll out one sheet of puff pastry onto parchment paper.
  • Spread Nutella over the sheet of puff pastry.
  • Add a layer of raspberry jam over the Nutella.
  • Roll out the second sheet of puff pastry and place it over the other sheet, sandwiching the Nutella and jam between the two sheets.
  • Cut the heart shapes and transfer them to a parchment-lined cookie sheet.
  • Make the egg wash by beating one egg with a tablespoon of water.
  • Using a pastry brush, brush egg wash on each heart.
  • Bake for 10 min or until golden brown.
  • When using a cookie cutter, you will have excess amounts of dough. I usually will cut into bite-size pieces and bake them separately.
  • Cut any shape you’d like.
  • You can use any flavor of jam you’d like.
  • You can use a cream cheese filling with jam instead of chocolate if desired. Mix cream cheese, vanilla, and 1/4 cup powdered sugar until smooth, then spread onto puff pastry before baking. You can add jam, fruit, and Nutella too.
  • Make it savory with Pesto and Parmesan cheese, or store-bought Boursin spreadable cheese.
