Lemon curd cake

“If fate brings you lemons, make lemonade out of them.”

Fate gave me an extra 2 kg, for example. But there was no lemonade. But there was this incredible lemon cake. There is nothing unusual in his composition – everything is trivial. But at the same time, the result is very cool. There was absolutely nothing left of a large cupcake in half a day.

Be sure to try it – it’s just beautiful.

Ingredients per form 11 * 30 cm

Cupcake base

  • butter 150 grams
  • sugar 200 grams
  • cottage cheese 9-12% 150 grams
  • eggs 3 pcs.
  • lemon 1 pc.
  • baking powder 1 tsp
  • soda 1/4 tsp
  • flour 300 grams

Cooking recipe

Rub the curd through a sieve.

Beat butter with sugar until creamy.

Add cottage cheese and beat again.

Add eggs one at a time, beating well after each addition. Pour in lemon juice (50 ml) and add the grated zest, mix. Add flour sifted with baking soda and baking powder. We knead the dough.

We transfer the dough into a greased and sprinkled with breadcrumbs form and send it to an oven preheated to 180 degrees. We bake until a dry match, about 40-45 minutes.

Take out of the mold, cool and serve.
