The age of this cookie turned out to be very short-lived – after two hours after leaving the oven, only crumbs remained from it. Incredibly tasty – and despite the fact that the ingredients are needed the simplest 🙂 I got the installation to repeat it more than once 🙂
If someone is tempted to experiment, then lemon zest and juice can be replaced with orange ones – it will also be tasty and aromatic.
Ingredients for 30 pieces
- butter at room temperature 130 grams
- sugar 180 grams
- large egg 1 pc.
- vanilla essence 1 tsp
- lemon zest 1 tsp
- lemon juice 1 tbsp
- flour (it may take a little more or a little less – we look at the consistency) 300 grams
- baking powder 2/3 tsp
- soda 1/4 tsp
- salt 1/4 tsp
- icing sugar 3 tbsp
Beat butter with sugar until creamy. Add vanilla essence, zest, lemon juice and egg, beat again.
Add flour sifted with baking soda, baking powder and salt and knead the soft dough. Let me remind you: more or less than the specified amount of flour can go away, so add it gradually and watch the consistency of the dough.
Form the dough into balls the size of a walnut. Roll in powdered sugar.
Put on a baking sheet covered with parchment or foil at a distance of 6-7 cm from each other. We send to the oven preheated to 200 degrees and bake until the bottom of the cookies turns golden brown, about 10-13 minutes.
