This classic Polish dessert is cheap, easy to make, and delicious! I found it in my grandma’s recipe book. She told me it’s a dessert her mom used to make. The baked apple with farmer cheese recipe is very easy.

When I gave it a try for the first time, I fell in love with this dessert! It’s sweet, healthy, and fast to make.

There’s nothing better than Polish apples. When you stuff them with the farmer cheese, you will get the mouthwatering dessert you will never forget.

The fruits for this dessert will require quite large, so that you can put the filling, and tight, so that there are no caskets during cooking. As a rule, it is suitable for baking, as it is impossible, it is winter varieties. Curd filling also needs attention. Cottage cheese, if it is not fatty or not mixed with oil, during heating can be shattered, becoming dry, losing moisture and tenderness, which will reduce dietary qualities and flavoring. Avoid failure will help only cottage cheese with a large percentage of fatty, or a generous amount of oil. And this cottage cheese egg pancake recipe is ideal for that. It also doesn’t take much time to make it. If you want to vary with this recipe, you can do that with the cottage cheese. In this case, I opted for vanilla curd that goes perfectly with the taste of cinnamon and the apple. Because this is a healthier version, I didn’t use any sugar, but you could sprinkle it on top at the end. Well enough ranted to get started with these apple cinnamon cottage cheese pancakes.

  • Peel the apple and core the apple with an apple corer. Cut the apple into thin slices and put them in a bowl. Sprinkle with the lemon juice and some cinnamon powder. (You can also sprinkle some sugar on top).
  • Take a bowl and add the quark, the egg and the flour and beat with a whisk until you get a smooth batter.
  • Sprinkle some cinnamon on the apple pancakes.

Main Ingredients

  • Apples: 2 apples, peeled and cored. Sliced into 1/4″ slices. See below for the best apples to use for this recipe.
  • Seasoning: you will need 1 teaspoon of ground cinnamon and two teaspoons of brown sugar for the apples. You will also need one pouch of vanilla sugar for the cottage cheese filling.
  • Dried cranberries: 1/2 cup of dried cranberries will add sweetness and a little bit of a sour taste. You may like to use raisins instead, but because they are sweeter you can use 1/3 of a cup. If you like the sweetness, use 1/2 cup of raisins too.
  • Sliced almonds: 100 gm. of blanched sliced almonds will add a little bit of crunch. I purchase a small package of already sliced almonds.

Best apples to use in puff pastry

The very best apples to use in this recipe are a combination of firm and tart apples, such as Granny Smith, Honeycrisp, Braeburn, Golden Delicious, and any other tart apple. Firm and sour apple varieties hold well during the cooking process and don’t turn watery or mushy in your pie.

Avoid McIntosh and Red Delicious apples; they fall apart when baked.

I use Granny Smith apples and the pie turns out amazing every time! You can see whole apple slices when you cut into the pie and they taste phenomenal!

How to prepare the Cottage Cheese and Apple Pie

  • Preheat oven to 400 degrees Fahrenheit
  • Prepare the apples: peel, core and slice the apples into 1/4″ slices. Place them into a small mixing bowl and stir in the cinnamon and brown sugar until well combined.  Set aside.
  • Prepare the cottage cheese mixture:  place the cottage cheese, vanilla yogurt, vanilla sugar, dried cranberries, and sliced almonds in a large mixing bowl and mix well to combine.
  • Spread the cottage cheese mixture over one of the puff pastry sheets, making sure to leave some room on all edges of the puff pastry. Arrange the cinnamon and brown sugar-seasoned apple slices on top of the cottage cheese mixture.
  • Beat the egg in a small bowl, and using a silicone or pastry brush, apply the egg wash around the edges.
  • Place the second puff pastry sheet over the apples and gently lift/fold the edges of the bottom pastry sheet over the top one to seal the two pastry sheets together.
  • Cut 5 or 6 evenly spaced slits on the right and left sides of the pastry. Be careful not to cut all the way through.  Brush the pastry with egg wash and sprinkle the top with poppy seeds or sesame seeds.

Grandma’s Baked Apple With Farmer Cheese Recipe

Yield: 2 servings

Polish Baked Apple With Farmer Cheese Recipe

  • ½ cup of farmer cheese
  • 2 apples
  • 4 tbsps of raisins
  • 1 egg yolk
  • 2 tbsp of powdered sugar
  • 1 tbsp of butter
  • 1 tbsp of sour cream

Instructions

  • Preheat the oven to 392°F (200°C).
  • Wash the apples.
  • Cut the top of the apples, then hollow them out.
  • Blend the farmer cheese, egg yolk, powdered sugar, butter, and sour cream.
  • Add raisins to the farmer cheese mixture.
  • Stuff the apples with the farmer cheese mixture. Cover them with the apples’ tops you cut off before.
  • Bake on the pan lined with baking paper for 30 minutes. Serve warm or cold.

Preparation of baked apples with cottage cheese and bananas

1. Wash apples and dry. Cut the caps with tails and remove the core, leaving a small funnel for the filling.

2. Apples, not to the edges, fill with cottage cheese. If you are using degreased curd, you first mix it with butter of room temperature.

3. Pour from above on the spoon of honey.

4. Banana Clean, cut up with slices with a thickness of about 3 mm and put a couple of things into each apple.

5. From above, cover the remaining cottage cheese, put it tightly.

6. Place apples in the form that can be placed in the microwave. Cover their caps that cut off the first preparation.

Serve baked apples with cottage cheese and banana is best hot, however, and in the cooled form they are also obtained very tasty.

Hollow The Apples Out Very Carefully

Make sure the apple won’t rupture when hollowing out. It needs to be perfect, otherwise, the apple will fall apart in the oven. It was my mistake when I was making my grandma’s baked apple with farmer cheese for the first time. I thought that the tiny crack won’t make a difference. I was wrong! My apple fell apart and I needed to make it one more time.

Decorate The Apple With Whipped Cream.

Do it when the apple is cold, otherwise, the whipped cream will melt.

Serve It Warm Or Cold.
