If you’ve already made gingerbread cookies, but still can’t stop baking – here’s another fun 🙂 These gingerbread bears don’t need any shapes – they are simply molded by hand. And they are simply decorated with the same sugar glaze and decorative sprinkles. It will be great to sculpt and decorate these bears with children.
I baked 10 large palm-sized gingerbreads using the amount of ingredients in the recipe. But you can stick smaller bears if you want.
- sugar 120 grams
- honey 200 grams
- butter 200 grams
- dry ginger 1 teaspoon
- ground cinnamon 1 teaspoon
- eggs 1 piece
- soda 2/3 teaspoon
- flour 625 grams
- icing sugar 150 grams
- egg white 1 piece
For the dough, combine honey, sugar, butter and spices in a saucepan.
We put on the stove and cook until the butter and honey melt.
Transfer to a bowl and let cool slightly, about 5 minutes. Add the egg and flour sifted with baking soda and knead the plastic dough.
Then we divide the dough into parts – I did it through the scales, but you can also by eye. 10 larger balls for bodies (about 50 g / pc), 10 smaller balls for heads (about 20-25 g / pc), 60 small balls for paws and ears.
We collect bears on a baking sheet covered with parchment or a silicone mat. We press down the balls, make them flat.
We bake in an oven preheated to 180 degrees for about 15 minutes. We take out and cool completely.
Cooking the icing. Combine protein and icing sugar and beat until smooth.
We transfer to a pastry bag without a nozzle. Cut off the tip. We decorate the cookies. Have a nice tea!
