BANANA CREAM PIE RECIPE

This day, however, means so much more to us than an excuse to eat pie. A year ago my sister-in-law Kimi received a heart transplant on this very day.

It’s a day filled with a lot of emotion. A second chance at life for Kimi and a day of remembrance for her donor and her family.

Besides Thanksgiving, I rarely take the time to make a pie but a new tradition has been started. My friend Brittany gave me her homemade banana cream pie recipe and I absolutely loved it.

You know I hate making pie crusts but this one is easy!

Crimp the sides for that classic crust look. You want to blind bake (see directions below) it until it’s golden brown.

Next fill it with 3 sliced bananas and a super easy homemade vanilla pudding. Homemade custards usually terrify me but this one is super straight forward.

I made this cake from start to finish in under an hour. No instant pudding mix here.

HOW TO MAKE BANANA CREAM PIE

  • Preheat oven to 425 degrees and place rack in the middle.
  • Roll out dough to fit into a 9″ pie pan and pinch the edges of the crust like shown above. Chill crust in the refrigerator or freezer for at least 15 minutes.
  • After crust has been refrigerated or placed in freezer, line inside of pie with parchment paper and fill with pie weights or dried beans to prevent shrinking. Bake for 7-8 minutes. Remove from the oven, remove parchment paper, and prick with a fork. Return to oven and bake for 10-12 minutes or until golden brown. Let cool.
  • For the filling: In a large saucepan, add the sugar, flour, and salt. Gradually stir in the milk and cook over medium heat until mixture is boiling and thickens. Cook for 2 minutes.
  • Remove mixture from heat and add the butter and vanilla.
  • Transfer to a separate bowl. Allow mixture to cool to room temperature.
  • Slice bananas and place them in the pie crust and add the filling on top.
  • For the whipped cream: Place cream and sugar in a chilled large bowl and mix on high for 1-2 minutes. Add the vanilla and beat for an additional 1-2 minutes or until soft peaks have formed. Don’t whip too much or you will end up will cottage cheese looking whipped cream.
  • Spread the whipped cream over the top of the pie and chill unto ready to serve.

You can make this Banana Cream Pie ahead of time up to step 10. You can make the crust and the filling up to two days ahead of time and store separately. Because the bananas will start to brown you don’t want to slice and assemble them until the day of serving.

The super-secret ingredient

So, the reason the muffins are so moist is the addition of the cottage cheese. If you’re concerned, buy the small curd cottage cheese instead of the large curd.

But, I promise you, once these are cooked there is no cottage cheese taste. These muffins are a huge hit at our house for breakfast because adding the cottage cheese to the batter gives them a bit of a protein boost.

So, if you have a picky eater in your home, don’t tell them you’ve added cottage cheese because they won’t taste it.

If you have even more bananas to use, you may want to make this banana smoothie with ice.

Can I freeze cottage cheese banana muffins?

Firstly, one tip if you do decide to freeze these banana nut muffins ahead. I really recommend that you bake them without the paper muffin liners because they don’t’ hold up that well to freezing.

So, you can use a silicone muffin tin or get silicone muffin liners instead. Finally, it makes the process so much simpler because you won’t have to peel the paper liners off.

Changing up the flavor

So, for a little variety, you can make this muffin recipe with any type of addition you like. For instance, you can add chocolate or carob chips for a little different taste.

Are banana nut muffins healthy?

So, there is no reason why you cannot enjoy a small banana nut muffin for breakfast occasionally. However, baked goods don’t tend to be super healthy because they are higher in sugar and carbohydrates.

Plus, this parfait has a lot going on for such a small serving – strawberries, yogurt, cottage cheese, honey, peanuts, whole wheat cereal, lemon juice, and vanilla extract.

That’s a whole lot of flavor to pack into a single sweet treat.

Whipped Cottage Cheese Dessert Cups

This low-carb dessert takes only 5 minutes to make, and you can make it as sweet as you like by adjusting your sweetener.

Adding a tiny bit of honey doesn’t hurt the taste either.

Cottage and Cream Cheese Filled Crepes

A fluffy filling of cream cheese and cottage cheese combined with a delicately thin, flaky crust?

What’s not to love? These crepes are incredible.

They’re sweet enough to serve for dessert, but I love them as part of a lazy Saturday morning breakfast or brunch.

Whenever you decide to eat them, you’ll never want to use another recipe for crepes.

Cottage Cheese Cheesecake

The words “healthy” and “cheesecake” don’t often find themselves together in the same sentence.

That’s what makes this cottage cheese cheesecake so special.

It takes about an hour to cook but only 20 minutes to prepare, and even though it’s healthy – and it is – it’s also delicious.

The blackcurrant jam is an excellent topping, too. It’s not one you often find on cheesecakes, and that makes it even better.

brown sugar – 1 cup

oil – 1/2 cup

oat flour – 1 and 1/2 cups

wheat flour – 1/2 cup

cocoa powder – 1/2 cup

salt – a pinch

dark chocolate – 3.2 oz (90 g)

The banana cake tastes best when it is well chilled.

Cooking Time

  • 150g butter, plus for greasing
  • 200g sugar
  • 1 tsp vanilla sugar
  • 4 eggs
  • 250g cottage cheese
  • 300g flour
  • 1 tsp baking powder
  • 1-2 bananas

Turn on the oven to heat up to 360°F (180°C) with a fan.

Mash the bananas in a bowl. Then add the sugar, cottage cheese, eggs, oil and mix with the mixer.

In another bowl, mix all the dry ingredients without the dark chocolate. Then gradually add them to the egg mixture while mixing with the mixer.

Break the chocolate into small pieces and add it to the mixture.

Put the mixture in a greased mold covered with baking paper. You can add more chocolate chips or some fruit on top of the juicy brownie. I garnished it with some raspberries and it turned out very tasty.

Bake the banana brownie for 30-35 minutes and after you take it out, leave it to cool for 20 minutes.

The Brownie with Banana and Cottage Cheese turns out so much juicier than the regular recipe, that you can’t even taste the cottage cheese.
