Homemade dinner rolls have long been a staple of special occasions.

While the process of making traditional homemade dinner rolls can be time-consuming and labor-intensive, you don’t need to let that stop you from enjoying freshly-baked bread at your next gathering.

The recipe makes about eight large hamburger buns, or you can make smaller buns for sliders.   • Gather the ingredients.
  • When the dough cycle finishes, turn the dough out onto a floured board and punch it down. Knead 4 or 5 times; add a little more flour as you knead if necessary to keep the dough from sticking to your hands or the board.
  • Lightly grease a large baking sheet; sprinkle with cornmeal. Alternatively, line the baking sheet with parchment paper and sprinkle with cornmeal.
  • Pat the dough into a circle and cut into 8 even wedges. Form each wedge into a ball, then flatten each one into a smooth and fairly even circle, slightly bigger than a burger.
  • Preheat the oven to 375 F.
  • Brush the buns lightly with the egg wash (egg and water mixture). If desired, sprinkle with sesame seeds or poppy seeds.

Here are some tips to help you make the best buns!

  • Make sure your milk and butter are at room temperature.  Cold ingredients do not stimulate yeast growth, so your dough won’t rise properly.
  • To make these buns like tray buns, use an 8 x 8 baking pan.
  • If you want fresh buns ready for dinner (say 5:30), start this process around 2:30 in the afternoon.
  • When the buns are done baking, immediately brush them with butter.  This will give them nice buttery, shiny tops.

  • Once the dough cycle has completed, remove the dough to a lightly floured surface and cover with a clean tea towel.  Let rise for 15 minutes.
  • After this time, divide the dough into 12 portions.
  • Now it’s time to shape the dough into buns.
  • Make sure your hands are lightly floured.
  • Shape each portion of dough into a ball.
  • You want the tops of the buns to be taut, so while keeping the dough in a ball shape, you need to tuck the dough at the bottom of each bun, underneath as you roll.  You’ll get the hang of it as you roll them!
  • Grease an 8 x 8 baking pan with oil.
  • Then place the buns into the baking pan, in 3 rows of 4, spacing them out evenly.
  • Cover with a clean tea towel and let rest and rise in a warm place for 1 hour, or until the dough has doubled in size.
  • Preheat your oven to 350 degrees.
  • When the buns are done rising, bake for 25 minutes. When the bread is done, it will sound hollow when you tap on it.
  • As soon as you take the buns out of the oven, brush the tops with butter.

The downside to the vertical loaves is that the shape can be odd for making sandwiches, and you might need to cut the slices to make them fit neatly into your toaster. Horizontal Bread Machines

If tall loaves are too awkwardly shaped for you, look for a bread machine that produces horizontal, rectangular-shaped loaves that look more like bread that was baked in a standard loaf pan. These machines have a longer bread pan and larger baking chamber and tend to be able to bake larger loaves of bread than vertical bread machines. However, the increased baking capacity means this style of break maker tends to be larger overall and will take up more space in your kitchen.

Since there’s more room for the dough to move around in a horizontal, rectangular bread pan, machines equipped with just a single paddle may be less efficient at kneading the dough. Sometimes the dough can get stuck on one end of the pan while the paddle spins on its own, which can result in the loaves turning out unevenly shaped with more dough on one end or a tall middle with shorter ends. Higher-end machines might have two paddles for kneading so the dough is kneaded more efficiently and the shape of the finished loaf is more even.

Machines that bake horizontal loaves tend to be more expensive than those that bake vertical loaves, but you can find affordable horizontal bread machines.

  • Add all ingredients to the bucket of a bread machine in the order recommended by the manufacturer. Select the DOUGH cycle and press start. Keep an eye on the dough for the first few minutes of mixing. Add more water if it is dry and crumbly, and more flour if it is too sticky. The dough should be smooth and slightly sticky to the touch but should completely clear the sides and bottom of the bread machine bucket. Allow the cycle to finish.
  • Remove the dough when the machine beeps and cut into eighths with a sharp knife. (It is easiest to divide into half, then quarters, etc.). Gently shape into rolls by pulling down the bottoms of the dough to smooth out the tops.

Besides the price, it has a lot going for it, including an easy-to-use interface, multiple settings, and a modern design. But in our latest round of Lab testing, it produced sunken, dense bread that was browned on the outside but gummy and undercooked within. It didn’t fully mix the banana bread batter, leaving floury clumps in the unevely baked loaf.
  • Cuisinart 2-Pound Convection Bread Maker: A 16-item menu and convection cooking originally made this Cuisinart bread machine a great pick for multi-size loaves. The key to making light and fluffy dinner rolls is to make perfect dough. It is also highly recommended to weigh the flour using a food scale instead of measuring it by a cup to ensure consistency.

The first step is to make the dough using the bread machine and the key to soft bread is by aerating the flour (by sifting) and also weighing it (using a food scale) instead of measuring by cups.

The “Dough” cycle in a bread machine does all the job of mixing, kneading, and dough’s first rise. While the machine does all the tasks, you have all the time to prepare the burger patties.

Once the dough cycle is complete and the dough has been through its first rise, remove the dough from the bread machine container.

Once the dough cycle is complete, take the dough out of the bread machine pan and knead it on a lightly floured surface for a few seconds to make a smooth dough ball.

I have made this hamburger buns dough in the 2 lb. Hamilton Beach Artisan bread maker using the dough cycle. This recipe should work well for any bread machine.

You will also need a baking sheet to bake the burger buns, using parchment paper is optional.

Once you remove the buns from the oven, allow them to cool down completely on a wire rack, and then slice it with a serrated bread knife.

My friends, this recipe is easy! The bread machine does all the hard work.

We begin by adding all the dough ingredients to the bread machine and starting the dough cycle. I never, ever worry about the order the ingredients go in, but if your manufacturer recommends a specific order you might want to use that.

Before you walk away, check the consistency of the dough. You want the dough to be smooth and elastic, not sticking to the bread machine bucket. If it’s too dry and crumbly, add a bit more water. If it’s too wet and sticky, a bit more flour.

When the machine beeps, you’ll have lovely, risen dough. All that’s left to do is shape, rise again, and bake!

Shaping and baking the buns

Once the dough is ready, divide it up into eight equal sized pieces. You can use a scale if you want to be sure they’re the same, or you just divide it in half and keep going. Of course, if you want smaller buns you could make 12 or even 16.

To shape them, pinch the bottoms so that the top becomes round and smooth. Don’t try to squish them down from the top. Place them on a parchment-lined baking sheet and very gently flatten them out, just a little.

For a pretty shine and professional look, brush the burger buns with an egg wash and then sprinkle with sesame seeds or poppy seeds. You can also do this after the second rise, but I like to do it first to avoid deflating them later.

One important consideration is the type of flour you use.  As previously discussed, I recommend using bread flour to create the best texture when making yeast rolls in the bread machine.

Using skim or low-fat milk can make your rolls less tender because the fat in the milk works to tenderize the bread.

While you can omit the shortening (using all butter instead), it may cause your bread to be less fluffy.  This is because shortening coats the proteins in flour more efficiently than butter, thus creating superior tenderness.

Select the dough cycle and process according to your bread machine’s manufacturer’s instructions.

Line a 2 ¾ quart baking dish with parchment paper.

When the bread machine is done, transfer the dough to a work surface.  Deflate the dough by gently pressing it.  This causes the gluten to relax and allows the yeast to be redistributed.

Divide it into 12 pieces.  Cover the dough you aren’t working on with plastic wrap.

Form each piece into a bell by stretching and folding the sides over the center of the dough.  (Keep the dough that you aren’t working with covered.)

Flip the balls so that they are seam-side down and roll into balls.

Arrange the balls in the baking dish and cover them with a clean damp kitchen towel.  Let rise in a warm place for 45 minutes.

Brush the rolls with the egg and bake for about 30 minutes.

Let the rolls cool in the dish for 15 minutes.

Melt the butter in a small saucepan and add the garlic if desired.

Brush the melted butter on top of the rolls and sprinkle with the flaky salt.  Serve warm.

Tips & Tricks for Making This Bread Machine Rolls Recipe

  • I don’t recommend substituting another liquid for the milk – it is key to tenderizing the crumb and weakening the gluten structure.  Also, the proteins in it (along with the egg wash) help contribute to the browning. If you are dairy free, you could substitute a nut milk but there will be a deterioration in texture.
  • Don’t “punch” the dough down.  You want to shape with a more gentle hand.  You can be firm, but punching it can work out too much air.  Instead, gently press on it with your hands.
